Good Intentions and a Loss

Of course, I know going in to blog/social media challenges I know I can’t complete them but I try any way. That won’t stop happy posts…they just won’t be consistent. Commitment and appointments are not my strong suit.

Monday evening the world lost chef and cookbook author, Anna Pump. She made lots of appearances on Ina Garten’s Barefoot Contessa and was her very good friend. She was 81, which is quite a number of years but she lost her life as a pedestrian struck by a truck, that is no way for anyone to have to die. Rest in peace, Anna. I’m happy that my daughter was able to visit her shop, Loaves and Fishes in Bridgehampton, NY in 2012. 
Hug your loved ones often…life is precious.

Five Fine Things About Friday 9/25/15

1. Daisy(cat)finally accepted Bianca(kitten). They were chasing and batting each other this morning.

2. I started the morning with a one mile walking workout.

3. The sun is beaming. 

4. There are 19 episodes of, “In the Heat of the Night,” on my DVR List…Saturday I accidentally deleted my favorite 83 episodes, lol! Thanks to WGN they will be restored in no time. There are quite a few episodes that aren’t available on DVD and are aired on TV only, for some reason. Like the deleted scene in, “Smokey and the Bandit.” One of life’s mysteries.

5. I never have a bad day. Granted, annoying things still happen to upset me but I move on a few minutes later. I remember for years, if one bad thing happened, it consumed me. How in the world could I function that way? Maybe it’s the learned wisdom that comes with getting older. 

Peanutbutter Chocolate Chip Pancakes

My Dad made Ina Garten’s(Barefoot Contessa)pbutter/chocolate cupcakes…

Per usual, the base was taken from Better Homes and Gardens Red Checkered Cookbook but doubled.

2 cups flour

1 tbsp baking powder

1/2 tsp kosher salt

1/2 cup chunky peanutbutter(slightly melted in the microwave)

2 tbsp brown sugar(I would probably double this and add at least a tbsp white sugar, needed to be sweeter.)

2 eggs

2 cups milk

3/4 cup semi sweet chocolate chips

(I’m going to try 2 tsp of vanilla next time)

Combine ingredients, mix well, cook on med-low one ladle for each pancake, cook as usual but melt butter or margarine on griddle before each pancake. Makes about 12 small pancakes.
