Double Chocolate Zucchini Bread {a tweaked recipe}

I started with this recipe that I found on Pinterest.

I doubled the recipe, used an extra large zucchini which looked a like a little more than 4 cups,

1 1/2 cup sugar

1/2 cup brown sugar

1 3/4 cup vegetable oil(instead of applesauce)

…increased the cocoa to 1/2 cup and used 4 cups of all purpose flour. Omit the cinnamon and keep all other ingredients the same as original recipe but doubled.

Mix wet ingredients and sugars together, mix dry, combine, pour into greased loaf pans*see tip below*bake at 350 degrees for 30 minutes then 325 for 17 more minutes. Use your nose and instincts, my electric oven(ick, I prefer gas stoves)is way hot! A knife inserted should come out clean when done.



*Even though I used non stick loaf pans I slathered them with margarine(Shedd’s Country Crock original)guaranteed not to stick and it adds a touch of buttery goodness.

Makes 3 medium loaves( or two large)

This is SO good! The kids loved it, even Jenna who hates veggies, if she only knew! 🙂
