Vegetarian Pasta Bake

September 9th I made the decision to quit consuming meats, including seafood and fish. It seemed interesting to try and I could probably feel better by eating plant based foods that take less time to digest. Which includes breads and dairy so I’m by no means saving calories but I do feel healthier and much more energetic.

Here’s my pasta bake, full of olives, mushrooms and cheese!

1 small jar pasta sauce

1/3 lb pasta of choice

Any combo of olives

1 can diced tomatoes

1 reg size can(not the tiny cans)sliced mushrooms

2/3 cup mozzarella cheese

Sauté olives, tomatoes and mushrooms in butter, margarine or oil(2 tbs)until liquid is gone add pasta, transfer to greased pan, top with cheese, bake at 350 until cheese melts. Enjoy!
