While Shelli is still busy taking care of colds and stuffy noses, I will give you a recipe for the easiest and most delicious cookies you’ll ever make. When Shelli was in 5th grade, her teacher shared this recipe and it has been a family favorite since.
- 3/4 C Peanut Butter
- 2 Pounds Melting Chocolate, or White Chocolate (bars or wafers)
- 80 Hi Ho or Ritz Crackers
- Spread 1 tsp. peanut butter on each of 1/2 the crackers
- Top with the remaining crackers, a total of 40 cookies
- Melt chocolate in the microwave or double boiler and keep over simmering water or re-microwave if necessary
- Dip each cracker allowing excess to drain
- Place on wax paper to cool, allowing coating to completely set – 15 minutes in the refrigerator will work too.
- Store between layers of wax paper. These cookies freeze well also.

Baby Jenna never liked bibs…this creates big messes when self feeding starts. Sometimes, like on days that are warm(unlike today)I’ll take her onesie or shirt off and let her mess, mess, mess but since we are both not feeling well I decided to try to keep her partially clean while she dug in to her lunch. The fix…older sibling tshirts, or ones several sizes too big for the baby or toddler…even preschoolers while painting, etc.
I used a hair band to cinch up the bulk at the top, it quickly pops off by separating the fabric at each side after meal time. Jenna is not patient and when she’s through she’s through yesterday so I have to work quick. 😉
After your little one is done eating the shirt makes a great clean up rag! I plan on sewing several styles of bibs to sell in my shop but this worked great for Jenna! Pack several for travel. 🙂
Jenna’s Pbutter Baby Oatmeal
4-5 tbsp whole milk or formula(or soy or nut milk if not allergic)
2 tbsp of infant oatmeal cereal
1 heaping baby spoon of peanut butter
1/4 tsp of ground cinnamon
Microwave milk for about 20-30 seconds, mix all ingredients with the warm milk, let cool slightly before serving.

My Mom sent me the fabric from a quilt shop in California and I love it! Whenever I need a gift for someone I always know a pillow will make them smile…and comfy!

This is one of those, “before you fall asleep a fabulous experimental recipe pops in your mind,” kind of thing. I envisioned a can of Rotel giving a couple pounds of ground beef a bit of a flavor boost.
I had intended to add milk but I totally forgot about it and the mixture was moist enough anyway…
2 lbs. ground beef
1 packet onion soup mix
2 cups of bread crumbs(I used stale hot dog buns processed in a mini chopper.)
1 can Rotel
Mix all ingredients together, form into mini loaves like so…
Bake at 350 degrees for 1 hour and 10 minutes.
I served them with mashed potatoes and brown gravy but they would be delicious with fries too. A veggie would also work nicely.
This is by far my favorite out of all the meatloaf recipes I’ve cooked. I hope you will enjoy it too!
